Gail Ambrosius Chocolatiers – Beerific Taster’s Box – Beer and Chocolate Pairing
I gave my brother a Gail Ambrosius Chocolatiers’ Beerific Taster’s Box and he was kind enough to split it with me and three other people. It was interesting to try each beer and then taste how the paired chocolate affected it.
Our favorite pairings were:
- Next Door Brewing Company – Luminous American IPA + Lemongrass with Ginger truffle
- O’so Brewing Company – Liquid Soul Imperial Stout + Raspberry truffle
Beer | Chocolate | Comments |
---|---|---|
Founder's Brewing Company - Devil Dancer Triple IPA | Caramel Sprinkled with Sea Salt | Caramel malt is echoed by the caramel in the chocolate. The caramel subdues the maltiness of the beer, letting the hops and bitterness come through. |
New Belgium Brewing Company - Abbey Belgian Style Dubbel | Cointreau | Fruitiness of the Belgian yeast mirrors the orange in the Cointreau. |
Next Door Brewing Company - Luminous American IPA | Lemongrass with Ginger | The light, flowery hops are a natural fit for the citrus and grassy flavors of the chocolate. |
Homebrewed Imperial Brown | Blueberry | The roast and smoke of the beer goes well with the smooth blueberry chocolate, but neither have much effect on each other. |
O'so Brewing Company - Night Rain Porter | Shiitake | The dark roasted malt of the beer overpowers the subtle flavors of shiitake, providing no noticeable benefit from pairing. |
O'so Brewing Company - Liquid Soul Imperial Stout | Raspberry | Smoke and peat in the beer provide a rich contrast to the sweet, slightly sour raspberry chocolate. |
O'so Brewing Company - Liquid Soul Imperial Stout | Cinnamon/Cayenne | Complex smoke and peat are brightened up by cinnamon and a bit of spicy heat. |
